人物簡介：</p>
<p>
林東源，處女座，2004年創立 GABEE. 意式專業咖啡館，也在同年贏得第一屆臺灣咖啡大師比賽冠軍，並出版《GABEE. Latte Art 咖啡與牛奶的完美邂逅》。2006年獲得第三屆臺灣咖啡大師比賽冠軍，並出版《GABEE. 冠軍創意咖啡》;2007年，成爲第一位參與世界咖啡大師比賽之臺灣選手;並多次擔任教練、評審，同時也在元培科技大學餐飲科、馬偕管理學院餐飲科、中華職訓局、學學文創志業、高雄餐旅學院兼任講師。</p>
<p>
番薯“嫁”給咖啡</p>
<p>
林東源入行咖啡行業已有15年，現在，他是臺灣有名的咖啡達人。一路走來，有辛酸，有榮耀，更多的，是他對咖啡的癡癡不倦。</p>
<p>
他一直認爲，做咖啡就是要做創意。也因此，他把自己的咖啡店取名爲“GABEE。”，之所以取這個名字，是因爲咖啡在臺語發音類似“GABEE”的發音，而後面的小點，則爲“店”，合起來就是咖啡店。他說，這樣取名，簡單明瞭，親切自然。</p>
<p>
不僅如此，他做出的咖啡也充滿了創意。其成名作“啡你莫薯”，更是在2004年舉辦的第一屆臺灣咖啡大師比賽中捧得了冠軍。爲什麼會選擇番薯做素材?林東源笑了笑告訴記者：“臺灣人喜歡用番薯來比喻自己，而且臺灣的地形也很像番薯。用大家都很熟悉的番薯與咖啡相結合，展現沒人想過的創意，其味道肯定非常特別。他表示，當初是爲了讓啜飲者能喝出對咖啡的深刻情感，才試着把地瓜(番薯)的香味融入咖啡，並配上一個有趣的名稱。他的這個創意，讓不少顧客悄悄地戀上了咖啡的滋味。</p>

天鵝“遊”在咖啡上</p>
<p>
在創意咖啡上，林東源取得了不錯的成就。他的咖啡拉花技藝，在臺灣更是響噹噹。</p>
<p>
林東源自創的咖啡拉花，已有四十多種不同的圖案。除了市面上基本的葉子和心形圖案外，蝴蝶、天鵝、海螺、水母等都成爲他的拉花素材。不同於一般常見的先將奶泡倒入咖啡後，再用輔助器材在奶泡上畫出圖案的拉花做法，林東源更喜歡一邊倒入奶泡，一邊用左手精準地控制咖啡杯，右手晃動奶泡，這樣完成圖案的難度更高。</p>
<p>
林東源表示，要完成一杯好的花式咖啡，必須理性地分析咖啡與牛奶的比例， 仔細地觀察不同比例所呈現出的效果和口感。他更坦言，從各種不同圖案的拉花技藝中，咖啡更是像一種美學，在這裏，你可以與之進行心靈對話。</p>
<p>
不僅如此，林東源還曾出版過書籍《GABEE. Latte Art咖啡與牛奶的完美邂逅》、《GABEE。冠軍創意咖啡》兩本著作，教大家如何在倒牛奶的過程中形成奇妙的圖案。同時他也提醒愛好者要注意手勢、角度、力道與速度等拉花重要的細節。</p>
<p>
到臺灣GABEE。不單純爲咖啡</p>
<p>
如果你問林東源，爲什麼想要開咖啡店?他一定會回答你：“只是因爲喜歡咖啡店裏人與人互動的氣氛。” 而他也一直強調，經營咖啡店，除了互動外，更需要的是咖啡文化。</p>
<p>
在林東源的眼裏，咖啡文化的理解很簡單，就是有着自己國家的文化與素材，有着自己的想象，而不是單純地去模仿西方的咖啡文化。“咖啡店，不只是可以喝咖啡的地方，他還是一個互相交流咖啡的平臺。在這裏，大家可以報名上課，學習煮咖啡及開店，我也可以爲大家講解不同的咖啡理念，重要培育咖啡人才的技術。”林東源表示，在他們的咖啡店裏，客人們還可以購買到很多周邊的產品，有T恤、杯子，還有咖啡渣做成的手工皁等。</p>
<p>
林東源表示，咖啡文化是需要積累的，需要融入生活中的。也因這樣，他一直保持着自我學習的心態，從沒讓自己停下腳步。他說，如果重新選擇，他還是會在咖啡這條路上義無反顧地走下去……</p>
