	　　具有咖啡豆鑑定經驗的橋本智紀稱，咖啡豆的好壞直接影響咖啡的口感和香氣，好的咖啡豆應該大小適中、顆粒飽滿，有種子的自然光澤。他說，在數以千計的咖啡豆中，比較適合中國大陸，特別是像重慶這種重口味的城市的，要數印度尼西亞的曼特寧豆，其沖泡出來的咖啡口感醇厚，香氣比較濃郁。</p>
<p>
	<strong>　　烘焙 不要超過16分鐘</strong></p>
<p>
	　　真正喜歡喝咖啡的人，大多都選擇自己現衝現泡鮮咖啡，但咖啡豆的烘焙卻大有講究。橋本智紀稱，咖啡豆的烘焙時間應在15-16分鐘，最好不要超過16分鐘。否則，咖啡豆就會烘焙過度而變焦，喝起來有股燒糊的味道。他說，正常烘焙熟的咖啡豆，比如曼特寧，出爐時，會有一股濃濃的古木香氣，還夾有巧克力的味道和焦糖香。</p>

	<strong>　　沖泡 水溫88℃最合適</strong></p>
<p>
	　　橋本智紀稱，沖泡咖啡一次最好只購買兩週用的熟咖啡豆，衝完再買，因爲兩週後，熟豆的香氣會慢慢揮發和氧化，口感會變得比較渾濁。而松下翔太則稱，同一款咖啡，同一人在不同的心情下，沖泡出來的咖啡味道也是不一樣的。橋本智紀說，咖啡沖泡最合適的溫度是88℃，沖泡時不要一下子將開水全部倒進去，而應將開水弄成小股慢慢的倒進去沖泡。</p>

	<strong>　　喝咖啡 大口喝不宜小口品</strong></p>
<p>
	　　說起喝咖啡，松下翔太稱，可以像喝茶一樣大口喝咖啡，不宜像品酒一樣小口品。他說，人一天可以喝三杯左右的咖啡，最好的時間是早上和午間，因爲咖啡因可以提神醒腦。他提醒，對咖啡因過敏的人，最好晚上不要喝咖啡。</p>
