有時候我們去星巴克，可能是爲了喝杯茶或者要塊三明治。在過去幾年裏，這家咖啡巨頭正在積極改變自己單一的品牌形象：收購紐約茶葉品牌 Teavana、開設茶飲輕食店、推出更多茶飲新品，甚至是開始賣啤酒、紅酒和焗烤蔬菜、烤餅等(當然這些產品暫時還不會出現在國內門店中)。</p>

在最愛喝咖啡的美國人眼裏，星巴克已經成了一個喝茶的新選擇，其茶飲產品年增長率達 15%。而第二財季漂亮的 45.6 億美元營收當中，茶飲在北美同店銷售增長就達 1%，佔增長總額的 14.2%。想想看過去一季度星巴克在咖啡領域推了多少新品，就知道茶飲能取得如此成績有多不容易。</p>
<p>
而當星巴克一步一步把業務範圍從咖啡擴展到更多方向時，越來越多的非傳統咖啡品牌卻正在蜂擁進入咖啡市場。它們有的以一兩款咖啡新品試水、有的已開啓特別門店，還有像麥當勞這樣的，已經把賣咖啡這件事變成了持續的生意。</p>
<p>
麥當勞：麥咖啡，不止賣咖啡</p>
<p>
麥當勞算得上最早開始做咖啡生意的快餐品牌了。1993 年，它就在澳大利亞以獨立門店開始賣咖啡，不過一直到 2007 年開始才向全球擴張。在進入中國市場之初，McCafe 鮮煮咖啡還只是作爲麥當勞餐廳內的一款產品，待到 2010 年，北上廣深纔有了獨立的麥咖啡門店。</p>

現在，麥咖啡已經成了很多人喝杯咖啡的新選擇，深褐色主調加白色手寫式 logo 的門店設計也相當搶眼。在這裏，你可以以星巴克 2/3 的價格喝到一杯現磨咖啡，雖然整體種類不多，但常規的濃縮、美食、卡布奇諾、拿鐵、摩卡還是有的。如果你想喝點別的的話，麥咖啡也賣抹茶、奶茶、清茶或是雪冰等飲品，之後再搭配個麥芬、芝士蛋糕……有沒有一種來到麥當勞家的星巴克的感覺呢?</p>
<p>
肯德基：以低價殺入咖啡市場</p>
<p>
在看着別人家生意越做越好之後，肯德基直到今年才下定決心在中國市場上好好賣咖啡：到 2015 年年底，全國至少 2500 家肯德基門店將提供現磨咖啡產品，並且門店裝潢也會隨之升級。</p>

在肯德基看來，目前還沒有必要像麥當勞一樣推出獨立品牌，而是乾脆直接、實惠一點：用 10 元起的價格提供給顧客美式、拿鐵、摩卡、卡布奇諾等經典咖啡選擇。雖然看起來有些單調，但不可否認的是肯德基咖啡的小紅杯正悄悄在街頭出現。對於那些只是想喝杯咖啡、沒那麼多要求的顧客來說，肯德基顯然是一個輕鬆、省錢的選擇。</p>

除此之外，這家快餐巨頭也在咖啡容器上下功夫，其英國公司試驗了一款由餅乾製成的、裏面裹着糖紙、塗着白巧克力的咖啡杯，在喝完咖啡後，你完全可以把杯子也喫掉。如果這款咖啡杯能夠大範圍推廣起來，或許能讓更多人選擇走進肯德基買咖啡。</p>
<p>
必勝客：賣咖啡?先開一家咖啡館式概念店試試</p>
<p>
在賣咖啡這件事情上，必勝客有着自己的打算。雖然它家的羅蘭院長咖啡也算出名，但披薩恐怕還是最讓人記得住的產品，於是最近這個品牌就打算換換風格、變變形象，在香港開啓一家全新咖啡館式的概念店 Pizza Hut Super Delco。</p>

這家概念店一改普通必勝客門店中坐下點餐、等食的流程，而是讓顧客自己到櫃檯前買咖啡、三明治，並且店鋪面積也相對較小，整體走的是輕鬆、休閒的精緻路線，店內也供應一些特有甜品。對必勝客來說，賣咖啡可能不會是最重要的部分，但通過賣咖啡的形式來轉變品牌形象，或許會是不錯的路子。</p>
<p>
接下來必勝客打算在香港開設更多這樣的門店，並且選址多集中於住宅區附近，未來也不排除開到其它城市或地區的可能。</p>
<p>
哈根達斯：把彩色咖啡賣給 90 後</p>
<p>
如果說星巴克在用賣茶來改變單一的咖啡品牌形象，哈根達斯則在用賣咖啡來告訴大家，它不只是一家冰淇淋店。在上海南京西路步行街，哈根達斯全球首家咖啡店於上週正式開業(隔壁就是星巴克呢)，而顏色鮮豔的調製咖啡則成爲店內的主要產品，口味涵蓋抹茶、香草、巧克力等等。</p>

當然，哈根達斯家的咖啡也自帶着冰淇淋屬性，這不僅關乎於材料，透明玻璃咖啡杯、彩色的咖啡產品都獨具特色，目的是爲了吸引 90 後——在哈根達斯看來，這羣人將是最重要的咖啡消費羣體。而與哈根達斯展開合作的，則是意大利咖啡品牌 illy。</p>
<p>
眼下，單體咖啡店已成爲哈根達斯的一個重要項目，未來大家又將多一個喝咖啡的新去處了。</p>
<p>
狗不理：國內的高樂雅咖啡都是它家的……</p>
<p>
在去年拿下澳大利亞最大的咖啡連鎖品牌高樂雅的中國區永久使用權後，天津狗不理集團就成了既賣包子也賣咖啡的餐飲企業。</p>

在高樂雅咖啡門店內，咖啡是最主要的產品，其次還包括果味冰飲、熱狗、炸雞、蓋飯等產品。雖然由賣包子出身的狗不理負責經營管理，不過高樂雅中國團隊還是一羣愛咖啡的人在負責，所以類似於“來一杯狗不理咖啡”這種事情是不會出現的。</p>

雖然高樂雅目前僅在國內的天津、上海、成都等地設有門店，但其品牌影響力在全球來說都不能小覷(反正拿了挺多咖啡專業獎項)，並且看看微博上不少實地品嚐過後的網友反饋，無一不表示咖啡質量相當不錯。而狗不理方面也表示，未來將以商業合作和連鎖經營的方式，爭取在五年內把中國高樂雅咖啡連鎖店的數量增加到 200 家。</p>
<p>
當然，賣咖啡這件事可不只是餐飲業的專利。早前我們就曾集中報道過來自時尚界的多家咖啡館，當中不乏 GUCCI、HERMèS、agnès b.、VERSUS 這樣的品牌，而今年以來也連連曝出 Ralph Lauren 開賣餐食、BURBERRY 開咖啡館的消息。看起來，賣咖啡正在變成一種企業新時尚，而對我們來說也有了更多不一樣的選擇。</p>
