<p>
其實好的咖啡是沒有那麼大的刺激的，當然也是要分體質而言，也要分飲用的咖啡品質而言。今天我們來具體分析，是否飲用咖啡後會徹夜難眠。</p>
<p>
第一：在正常人的體質，喝過咖啡後，咖啡因在體內的半衰期是三個小時左右，過了半衰期，幾乎對身體或神經的刺激是可以忽略不計的，如果飲用咖啡後，大量的補水，排水，可能在體內的存留時間都不會超過兩個小時，怎麼會讓您整宿都合不了眼呢。</p>

第二，我們要具體專業分析飲用的咖啡的品質。</p>
<p>
咖啡包含各種成分，萃取並不是要將這些成分全都萃取出來的，通常有這樣一個法則：如果咖啡的粉量一定，則可溶成分的萃取量由研磨度和時間來決定。研磨度越細的咖啡粉，萃取時間越長，得到的成分越多。根據實驗，如果將定量的咖啡粉中能夠萃取出的所有成分全都萃取出來，最高可萃取出30%的成分。但這些成分並非全部都是我們需要的。咖啡中有我們需要的成分，也有我們不需要的成分，萃取的時間越長就越容易將我們不需要的不好的成分萃取出來。</p>
<p>
也就是說，如果不正確的操作，或不正確的咖啡萃取，纔會造成刺激性物質的析出。</p>
<p>
其中這些成分當中，我們最不需要的成分當中最主要代表就是“單寧”，正確的稱呼應該叫鞣酸。咖啡生豆中含有8%~9%，烘焙後的原豆中含有4%~5%。與咖啡因一樣，具有在某些烘焙度下會被分解的性質。烘焙到法式或意式烘焙左右的深度時，90%的單寧會被分解。</p>

一般的人會認爲深度烘焙的咖啡刺激性強，淺度烘焙咖啡刺激性弱，這種想法是完全錯誤的，誤以爲淺度烘焙咖啡刺激性較弱，而在睡前引用的話，一定會讓你睜眼到天亮!隨着烘焙度越深，咖啡因與單寧的含量越少。刺激性也會減弱。千萬別被咖啡的外表顏色給騙了。</p>
<p>
我們不想萃取出的單寧，也是造就咖啡澀味的元兇。單寧是天使也是惡魔，少量的單寧，能夠發揮出咖啡的甘甜與醇厚度，少量的咖啡鞣酸還有一種廣泛的抗菌作用!但不正確的烘焙，或烘焙過淺加之錯誤的萃取造成單寧量的增多，惡魔就發揮作用了，不僅讓咖啡充滿澀味，更會讓你徹夜難眠。</p>
<p>
咖啡刺激性，不僅僅是製作者或烘焙者造成，往往飲用者錯誤的飲用方法也是形成刺激性的原因之一。咖啡需要快速飲用，最好在咖啡餘溫尚存的情況下飲用完，咖啡的刺激性，往往也會隨着咖啡溫度的降低而釋放。</p>

所以，好的咖啡，也就是在正確烘焙的前提下，正確的操作，正確的萃取，及時飲用，便可減少單寧或咖啡因的刺激性，即使夜間喝咖啡，也可以讓您睡個安穩覺。</p>
