所謂“咖啡生豆的處理法”,指的是將咖啡從果實製成生豆的過程。</div>

採收完成之後的咖啡豆需要經過繁複的處理手續,才能被精製成爲咖啡生豆。精製後的咖啡豆,將容易腐壞的內外果皮及果肉去除之後,再將種籽取出;一般來說,五公斤的咖啡豆約可精製成一公斤的生豆。精製後的咖啡生豆也被稱爲“Green Bean”。</div>

目前常見的咖啡精製方式有三種,日曬法、水洗法及綜合上述兩種的<a href="https://www.gafei.com/baxikafei/20141219/20403.html">半日曬</a>法。</div>

一、日曬法:</div>
<div>
</div>
<div>
咖啡豆採收後,經由自然乾燥法使之乾燥,原本鮮紅色的咖啡豆會因此變成黑色的Dry cherry。經過這個處理程序的咖啡豆含水率將大輻降低至11~12%。日曬法的進行方式非常簡單,只要將採收下來的咖啡豆平攤在露天日曬場所,以陽光曝曬乾燥數日便可。爲了使咖啡豆乾燥度均一,也爲避免咖啡豆發酵,在曝曬的過程中需要不時的翻動,如同臺灣農家的“曬穀”手法。</div>

在進行日曬處理的期間,除了要對咖啡生豆進行翻動攪拌之外,入夜後還要再蓋上一層防水布阻擋夜露。通常如果咖啡豆的成熟度夠高,則在幾天的日曬之後可以再進一步的進行精製,如果咖啡豆的成熟度不夠高,可能需要一個禮拜或更久的時間才能乾燥完成。</div>

除了自然的日曬法使之乾燥之外,近年來也有利用大型機械來進行咖啡豆脫水的手續。</div>

經過日曬或機械乾燥的咖啡豆會再經過去除果肉的手續,將已經變成黑色的堅硬果皮取下,而成爲咖啡生豆,取出之後的咖啡生豆再經過挑選、分級,纔會運送到市場上待價而沽。</div>
<div>
</div>
<div>
日曬法的處理方式優點在於成本低廉、作業單純且不需要複雜設備,因此過去幾乎所有的咖啡生產國都以這樣的手續來處理生豆。但這樣的處理方式最大的缺點是受制於天候條件,且且花費的時間較長,而且也容易混雜過多的瑕疵豆或雜質。</div>

現在除了少數幾個國家之外,幾乎其它國家都已經改用水洗的方式進行生豆處理。維持著日曬處理法的國家有巴西、埃塞俄比亞、也門、玻利維亞等國。其中埃塞俄比亞的哈拉摩卡、也門摩卡都是著名的日曬咖啡豆。</div>

二、水洗法:</div>
<div>
</div>
<div>
水洗法創始於十八世紀中期,爲目前主要的咖啡生豆處理方法,盛行於中南美洲各國。</div>
<div>
</div>
<div>
不同於日曬法後將果肉去除,水洗法的生豆處理方式在一開始就將果肉去除,接著將去除果肉的咖啡豆存放在發酵槽中去除殘留的果膠和黏膜,最後再將清洗乾淨之後的豆子烘乾,經由此法處理完成的咖啡生豆,含水率約在12~13%。</div>

<div>
水洗法一開始便將所有咖啡豆放入水桶中進行篩選,且於接下來的過程中不斷的將未熟豆及瑕疵豆提早去除,這是水洗法最大的優點。因此經由此法處理完成的生豆品質極高,外觀也較日曬豆佳,因此交易價格也跟著水漲船高。</div>

可惜水洗法繁複的手續也造成了作業及管理上的困難,由其在進行發酵的過程中,咖啡豆容易附著上發酵的味道造成酸味過重而成爲劣質豆。由其在發酵槽疏於管理的情況下,也可能會造成其中的微生物產生變化,進而造成生豆品質的低落。</div>

再者,水洗式的處理方式極爲花費水資源,經統計,爲了取出一公斤的咖啡生豆,需要使用50升的清水來進行水洗作業。 這在某些缺水的咖啡生產國幾乎是不可能的任務,水洗法進行時需要使用大量機械進行各項作業,對某些國家的咖啡農來說也是個沉重的負擔。</div>

三、<a href="https://www.gafei.com/baxikafei/20141219/20403.html" style="font-size: inherit; font-style: inherit; font-variant-caps: inherit;">半日曬</a>/<span style="font-size: inherit; font-style: inherit; font-variant-caps: inherit; background-color: transparent;">半水洗法:</span></div>

<a href="https://www.gafei.com/baxikafei/20141219/20403.html" style="font-size: inherit; font-style: inherit; font-variant-caps: inherit;">半日曬</a>是將舊有的日曬法進行改良, 先將剛採收完成的咖啡豆浸入大水槽之內進行淘選,去除了瑕疵豆與雜質之後再利用機器將果肉及外果皮去除,但仍保有咖啡內果皮的部分,最後再將包覆著內果皮的咖啡豆送往日曬場進行日曬的手續。</div>

利用日曬進行乾燥的期間,仍然會不時的翻動咖啡豆以確保咖啡生豆能均勻的脫水、避免過度發酵。以半日曬處理的咖啡豆會在出口前連同內果皮靜置一段時間以待咖啡風味熟成,而在即將出口之前將內果皮從咖啡豆上去除。</div>

這樣的方式主要在巴西境內開始被使用,再加上某些巴西莊園也開始揚棄機器採收的方式來摘取咖啡豆,改用成本較高的人力來進行咖啡採收,接著再以<a href="https://www.gafei.com/baxikafei/20141219/20403.html">半日曬</a>的方式來進行後續處理,讓咖啡品質有明顯提升。利用日曬法連同內果皮一起進行乾燥手續的精製方式,一般被稱之爲Pulped Natrual(<a href="https://www.gafei.com/baxikafei/20141219/20403.html">半日曬</a>)。</div>

也有地方的半水洗方式會將採收完成的內、外果皮和果肉完全去除之後再進行日曬乾燥手續,主要使用在氣候較溼潤的咖啡生產國家,如印尼。這樣的方式主要是爲了避免帶著內果皮的咖啡豆在進行乾燥的過程中,因爲溼氣較重而產生不好的味道。</div>

而這樣的處理方式被稱之爲Semi-Washed(半水洗)。</div>

</div>
<div>
經由日曬處理後的咖啡生豆含水率較低,而水洗式處理咖啡生豆含水率較高,這也讓咖啡生豆的外觀產生明顯的不同。一般來說,經由水洗處理後的咖啡生豆顏色較接近青綠色,相對的,經由日曬處理的咖啡豆則較偏白。水洗式處理後的咖啡生豆外皮較有平滑有光澤,經日曬法處理後的咖啡豆大多仍保留著銀皮。</div>

雖然目前咖啡生豆的處理方式大多趨向水洗法,或因應國家內的氣候條件採用半水洗的方式進行精製,但我們不能因此就認定水洗的咖啡生豆就是好的咖啡。</div>

<div>
水洗法的咖啡評價高的原因在於整齊的外觀,但有好的外觀不表示就會有好的味道。舉例來說,由日曬處理後的Mocha系咖啡雖然在外觀上大小不一,但其獨具的葡萄酒香氣、豐富的果酸及巧克力般的尾韻也是讓人難以抗拒的美味咖啡。</div>
